
Ingredients for Ham Steaks:
2-4 ham steaks (about 6-8 oz each)
1 cup BBQ sauce (your favorite low-carb or homemade version)
Ingredients for Cranberry Pilaf Rice (Low-Carb Version with Cauliflower Rice):
1 medium head of cauliflower (about 1 lb), grated or processed into rice-sized pieces
½ cup fresh or dried cranberries (unsweetened)
1 tbsp olive oil
1 small onion, diced
2 garlic cloves, minced
1 tbsp fresh thyme (or 1 tsp dried thyme)
1 cup chicken or vegetable broth
Salt and pepper to taste
Instructions for Ham Steaks:
Preheat your grill or Blackstone to medium-high heat (about 375°F).
Brush the ham steaks with 1 cup BBQ sauce on both sides.
Grill the ham steaks for 4-5 minutes per side, or until they’re heated through and slightly caramelized with the sauce.
For the Cranberry Pilaf Rice: Heat 1 tbsp olive oil in a skillet over medium heat.
Sauté the diced onion and garlic for 3-4 minutes, or until softened.
Add the cauliflower rice and 1 tbsp thyme, and cook for about 5-6 minutes until tender.
Stir in ½ cup cranberries and 1 cup broth, and simmer until the cauliflower rice absorbs the liquid and becomes tender, about 5-7 minutes. Season with salt and pepper.
Serve the grilled ham steaks over the cranberry pilaf rice.
