Beef & Barley Soup
Serves: 6
Ingredients:
1 lb stew beef, cubed
1 cup pearl barley
3 carrots, diced
3 celery stalks, diced
1 onion, chopped
3 garlic cloves, minced
6 cups beef broth
1 tsp dried thyme & rosemary
Salt & pepper
Instructions:
Crockpot: Combine all ingredients. Cook on low 8 hours or high 4 hours.
Stovetop: Brown beef in a large pot, add veggies, garlic, barley, broth, and herbs. Simmer 1–1.5 hours until tender.
