Ingredients:
- 1 head of cauliflower, cut into florets
- 2 cloves garlic, minced
- 2 tablespoons butter or olive oil
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Chopped fresh parsley for garnish (optional)
Instructions:
1. Place the cauliflower florets in a large pot and cover with water. Bring to a boil and cook for about 10-12 minutes, or until the cauliflower is very tender.
2. Drain the cauliflower well and transfer it to a food processor or blender.
3. Add minced garlic, butter or olive oil, grated Parmesan cheese, salt, and pepper to the food processor or blender with the cauliflower.
4. Blend until smooth and creamy, scraping down the sides as needed. If the mixture is too thick, you can add a splash of milk or vegetable broth to achieve your desired consistency.
5. Taste and adjust seasoning, if necessary.
6. Transfer the cauliflower mashed potatoes to a serving dish and garnish with chopped fresh parsley, if desired.
