Ingredients:
2 cups of your choice of fruit (e.g., strawberries, blueberries, raspberries, peaches)
2-3 tablespoons of chia seeds
1-2 tablespoons of sweetener (such as honey, maple syrup, or agave nectar)
1 tablespoon of lemon juice (optional, for a hint of tartness)
Instructions:
Wash and prepare your chosen fruit by removing any stems, seeds, or pits. If using larger fruits like peaches, chop them into smaller pieces.
Place the fruit in a saucepan over medium heat. If you're using firmer fruits like apples or pears, you may want to add a splash of water to help them soften.
Cook the fruit, stirring occasionally, until it starts to break down and become syrupy. This usually takes about 5-10 minutes, depending on the fruit.
Once the fruit has softened, mash it with a fork or potato masher to your desired consistency. If you prefer a smoother jam, you can blend it with an immersion blender or food processor.
Stir in the chia seeds, sweetener, and lemon juice (if using), then reduce the heat to low. Let the mixture simmer for another 5-10 minutes, stirring frequently, until it thickens to your liking.
Remove the jam from the heat and let it cool for a few minutes before transferring it to a jar or airtight container.
Once completely cooled, store the jam in the refrigerator. It will continue to thicken as it cools.
Enjoy your homemade chia seed fruit jam on toast, yogurt, oatmeal, or however you like to enjoy jam!
