Chicken & Wild Rice Soup
Serves: 4–6
Ingredients:
2 chicken breasts or thighs, diced
1 cup wild rice, rinsed
3 carrots, diced
2 celery stalks, diced
1 onion, chopped
3 garlic cloves, minced
6 cups chicken broth
1 tsp thyme
Salt & pepper
Instructions:
Crockpot: Combine all ingredients. Cook on low 6 hours or high 3 hours.
Stovetop: Sauté onion, garlic, carrots, and celery in olive oil 5 min. Add chicken, broth, rice, and thyme. Simmer 35–40 min until rice is tender.
Taste, season, and serve.
