Ingredients:
- 2 cups cooked rice (preferably cooled)
- 2 eggs
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup mixed vegetables (carrots, peas, corn, bell peppers, etc.)
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Optional: chopped green onions for garnish
Instructions:
1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
2. Crack the eggs into the skillet and scramble them until fully cooked. Remove them from the skillet and set aside.
3. Add the remaining tablespoon of vegetable oil to the skillet. Add minced garlic and chopped onion, and sauté until the onion becomes translucent.
4. Stir in the mixed vegetables and cook until they are tender yet still crisp.
5. Add the cooked rice to the skillet, breaking up any clumps with a spatula or spoon. Stir-fry for a few minutes until the rice is heated through and starts to crisp slightly.
6. Push the rice mixture to the side of the skillet to create an empty space. Pour the beaten eggs into the empty space and let them cook for a few seconds until they begin to set. Scramble the eggs into the rice mixture until evenly distributed.
7. Drizzle soy sauce over the rice and egg mixture, and toss everything together until well combined.
8. Season with salt and pepper to taste. Adjust the seasoning and soy sauce according to your preference.
9. Garnish with chopped green onions, if desired, and serve hot.
