Ingredients:
- 4 cube steaks
- 1 tablespoon olive oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (4 oz) diced green chilies
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: shredded cheese, chopped cilantro, sour cream
Instructions:
1. Heat olive oil in a large skillet over medium heat.
2. Season the cube steaks with salt and pepper on both sides, then add them to the skillet. Cook for about 3-4 minutes per side, or until browned.
3. Remove the cube steaks from the skillet and set aside.
4. In the same skillet, add the sliced onion and bell pepper. Cook until they are softened, about 5 minutes.
5. Stir in the diced tomatoes, diced green chilies, chili powder, and cumin. Cook for another 2-3 minutes, until heated through.
6. Return the cube steaks to the skillet, nestling them into the vegetable mixture.
7. Cover the skillet and let everything simmer together for about 10-15 minutes, until the cube steaks are cooked through and tender.
8. Serve the fiesta cube steaks hot, topped with optional toppings like shredded cheese, chopped cilantro, and sour cream. Enjoy!
For enhanced flavor, allow the cube steaks to marinate for one hour up to overnight in a mixture of cumin, chili powder, green chilies, and tomatoes.
