🌾 Ingredients:
2 cups whole wheat pastry flour (or sub half all-purpose + half spelt for a lighter texture)
1 tbsp baking powder
½ tsp baking soda
½ tsp sea salt
6 tbsp cold grass-fed butter (or cold coconut oil for dairy-free)
¾ cup buttermilk (see below for homemade version)
1 tsp raw honey (optional, adds a subtle sweetness)
🧈 Homemade Buttermilk Sub:
Mix ¾ cup milk (whole, almond, or oat) with 1 tsp apple cider vinegar or lemon juice. Let it sit for 5 minutes until curdled.
👩🍳 Instructions:
Preheat your oven to 425°F (218°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, baking soda, and salt.
Cut in your cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs (little pea-sized bits of butter are perfect).
Add honey (if using) and pour in the buttermilk. Stir gently until just combined — don’t overmix!
Turn the dough onto a lightly floured surface and fold it over itself 4–5 times. This creates those dreamy flaky layers.
Pat or roll dough to about ¾ inch thick. Cut with a biscuit cutter or glass.
Place on the baking sheet so the edges just touch (this helps them rise taller).
Bake 12–15 minutes or until golden brown on top.
Optional: Brush the tops with a touch of melted butter or honey when they come out of the oven.
🍯 Tips & Whole-Food Substitutions:
For extra flavor, mix in fresh herbs like rosemary or chives.
Use almond flour (1 cup) + oat flour (1 cup) for a gluten-free version (add 1 egg for structure).
For heartier biscuits, replace ¼ cup of the flour with ground flaxseed.
