Ingredients:
- 2-3 large eggs
- Salt and pepper to taste
- 1/4 cup diced ham
- 1/4 cup shredded cheese (cheddar, mozzarella, or your choice)
- Optional vegetables: diced bell peppers, onions, mushrooms, spinach, tomatoes, etc.
- 1 tablespoon butter or oil for cooking
Instructions:
1. Crack the eggs into a bowl, season with salt and pepper, and whisk until well combined.
2. Heat butter or oil in a non-stick skillet over medium heat.
3. Once the butter is melted or the oil is hot, add the diced ham to the skillet and cook for 1-2 minutes until it starts to brown slightly.
4. If using vegetables, add them to the skillet with the ham and cook until they are softened, about 2-3 minutes.
5. Pour the whisked eggs over the ham and vegetables in the skillet.
6. Allow the eggs to cook undisturbed for a minute or so until the edges start to set.
7. Using a spatula, gently lift the edges of the omelet and tilt the skillet to let the uncooked eggs flow to the edges.
8. Once the omelet is mostly set but still slightly runny on top, sprinkle the shredded cheese evenly over one-half of the omelet.
9. Carefully fold the other half of the omelet over the cheese to form a half-moon shape.
10. Cook for another minute or until the cheese is melted and the eggs are cooked through to your liking.
11. Slide the omelet onto a plate and serve hot.
