- 1 lb (450g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups (480ml) beef broth
- 1 cup (240ml) milk
- 2 cups (200g) elbow macaroni or any short pasta shape
- 1 can (14.5 oz/410g) diced tomatoes
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 cup (100g) shredded cheddar cheese
- 1/2 brick of cream cheese
- Chopped fresh parsley for garnish (optional)
Instructions:
1. In a large skillet, cook the ground beef over medium heat until browned, breaking it up with a spoon as it cooks. Drain any excess grease from the skillet.
2. Add the diced onion and minced garlic to the skillet with the cooked ground beef. Cook for 2-3 minutes, or until the onion is softened.
3. Stir in the beef broth, milk, diced tomatoes (with their juices), paprika, dried oregano, dried basil, garlic powder, onion powder, salt, and pepper.
4. Bring the mixture to a simmer, then add the pasta. Stir to combine.
5. Cover the skillet and let the mixture simmer for about 10-12 minutes, or until the pasta is cooked to your liking and most of the liquid is absorbed, stirring occasionally to prevent sticking.
6. Once the pasta is cooked, remove the skillet from the heat and stir in the shredded cheddar cheese and 1/2 brick of cream cheese until melted and creamy.
7. Taste and adjust the seasoning if needed. If the mixture is too thick, you can add a little more milk to reach your desired consistency.
8. Garnish with chopped fresh parsley, if desired, and serve hot.
