Ingredients:
10 chicken tenders, butterflied
1 brick of cream cheese (8 oz)
1 brick of Monterey Jack cheese, shredded (8 oz)
2 cups of mixed greens, chopped
1 pound jalapeño bacon
Toothpicks
Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C).
Prepare the Filling: In a medium-sized bowl, mix together the cream cheese, shredded Monterey Jack cheese, and chopped mixed greens until well combined.
Butterfly the Chicken: Carefully butterfly each chicken tender by slicing them in half lengthwise, being careful not to cut all the way through.
Stuff the Chicken: Spoon the cheese and greens mixture into the center of each butterflied chicken tender. Fold the chicken back over to enclose the filling.
Wrap with Bacon: Wrap each stuffed chicken tender with a strip of jalapeño bacon, securing it with toothpicks as needed to keep the bacon in place.
Bake: Place the bacon-wrapped chicken tenders on a baking sheet lined with parchment paper or a greased baking dish. Bake in the preheated oven for 30 minutes, or until the chicken is cooked through and the bacon is crispy.
Serve: Serve the chicken tenders hot, alongside a side of green beans or your favorite vegetable.
