Serves: 4–6
Ingredients:
1 cup lentils, rinsed
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
2 cups chopped kale or spinach
3 garlic cloves, minced
1 can diced tomatoes (14 oz)
6 cups veggie broth
1 tsp cumin & paprika
Salt & pepper
Instructions:
Crockpot: Combine all ingredients. Cook on low 6–7 hours or high 3 hours.
Stovetop: Sauté onion, garlic, carrots, and celery. Add lentils, tomatoes, broth, spices. Simmer 30–35 min until lentils tender. Add greens at the end.
