Serves: 4–6
Ingredients:
1 cup small pasta or quinoa
1 can kidney or cannellini beans
1 zucchini, diced
2 carrots, diced
2 celery stalks, diced
1 onion, chopped
3 garlic cloves, minced
1 can diced tomatoes
4 cups broth
Italian herbs
Salt & pepper
Instructions:
Stovetop: Sauté veggies 5 min. Add beans, tomatoes, broth, herbs. Simmer 25–30 min. Add pasta/quinoa last 10 min.
Crockpot: Add everything except pasta/quinoa. Cook 6 hrs low or 3 hrs high. Add pasta last 15–20 min before serving.
