Here's a simple and refreshing recipe for cucumber bites: My favorite!

Side note - My husband thought I was weird for making these things. He said, “It's just my buddy coming over. We’re just going to watch a football game; you don't have to get all fancy. This isn't ladies’ night or anything.” I'm like. You just worry about getting the TV set up. I will take care of the food because I love making delicious, beautiful food.

When I get compliments on the look and flavor of what I made, I get such a boost of confidence. It is like when you get a compliment on your looks; it makes you feel great! I did not have one cucumber bite left, and they both insisted that I needed to make more for them to take to work the following week. 

Ingredients:

- 1 English cucumber

- 4 ounces cream cheese, softened

- 2 tablespoons chopped fresh dill

- 1 teaspoon lemon juice

- Salt and pepper to taste

- Smoked salmon slices (optional)

- Thinly sliced jalapeño (optional)

- Fresh dill sprigs for garnish (optional)

Instructions:

1. Wash the cucumber and pat it dry. Cut the cucumber into 1/2-inch thick slices.

2. In a small bowl, mix together the softened cream cheese, chopped fresh dill, lemon juice, salt, and pepper until well combined.

3. Using a small spoon or a piping bag fitted with a star tip, top each cucumber slice with a dollop of the cream cheese mixture.

4. If desired, top each cream cheese-topped cucumber slice with a small piece of smoked salmon and/or a slice of thinly sliced jalapeño for added flavor and heat.

5. Garnish each cucumber bite with a small sprig of fresh dill, if desired, for a decorative touch.

6. Arrange the cucumber bites on a serving platter and serve immediately, or cover and refrigerate until ready to serve.

Ingredients:

- 1 package (8 oz) cream cheese, softened

- 1/2 cup shredded cheddar cheese

- 1/4 cup chopped green onions

- 1/4 cup chopped red bell pepper

- 1/4 cup chopped black olives (optional)

- 1/4 teaspoon garlic powder

- Salt and pepper to taste

- 4 large flour tortillas (10-inch diameter)

- Sliced deli meat (such as ham, turkey, or roast beef), optional

Instructions:

1. In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped green onions, chopped red bell pepper, chopped black olives (if using), garlic powder, salt, and pepper. Mix until well combined.

2. Spread a thin layer of the cream cheese mixture evenly over one side of each flour tortilla, leaving a small border around the edges.

3. If desired, layer slices of deli meat over the cream cheese mixture on each tortilla.

Instructions:

1. In a mixing bowl, combine the softened cream cheese, mayonnaise, Dijon mustard, salt, and pepper. Mix until smooth and well combined.

2. Trim the crusts off the bread slices, if desired, for a more refined look.

3. Spread a thin layer of the cream cheese mixture evenly onto each bread slice.

4. Layer thinly sliced cucumber evenly over the cream cheese mixture on half of the bread slices. If using, add a layer of smoked salmon or deli meat on the other half of the bread slices.

9. Serve immediately or cover with a damp paper towel and plastic wrap to prevent them from drying out if not serving right away.
