Ingredients:
4–5 potatoes, peeled and diced
2 leeks, cleaned & sliced
3 garlic cloves, minced
4 cups vegetable or chicken broth
1/2 cup cream or cashew cream (optional)
Salt & pepper
Instructions:
Crockpot: Add all except cream. Cook on low 6 hours or high 3 hours. Blend smooth.
Stovetop: Sauté leeks & garlic 5 min. Add potatoes & broth, simmer 25–30 min. Blend, stir in cream, season.
