Ingredients:
- 1 cup pumpkin purée
- 1/2 cup almond butter (or peanut butter)
- 1/4 cup honey or maple syrup
- 2 cups rolled oats
- 1/2 cup vanilla protein powder
- 1/4 cup ground flaxseed
- 1 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 cup dark chocolate chips (optional)
Instructions:
1. Line an 8x8-inch baking dish with parchment paper.
2. In a large bowl, mix the pumpkin purée, almond butter, honey, and vanilla extract until smooth.
3. Add in the oats, protein powder, ground flaxseed, pumpkin pie spice, and cinnamon. Stir until well combined.
4. Fold in the dark chocolate chips if using.
5. Press the mixture into the prepared baking dish, spreading it evenly.
6. Refrigerate for at least 1 hour, then cut into bars.
7. Store in the fridge for up to a week or freeze for longer storage.
