Ingredients:
- 1 cup cooked quinoa, cooled
- 1 ripe avocado, diced
- 1 cucumber, diced
- 1/4 cup shredded carrots
- 2 tablespoons chopped fresh cilantro
- Juice of 1 lime
- 2 tablespoons extra virgin olive oil
- Salt and pepper, to taste
- Optional: sliced almonds or pumpkin seeds for crunch
Instructions:
1. In a large bowl, combine the cooked quinoa, diced avocado, diced cucumber, shredded carrots, and chopped cilantro.
2. Drizzle the lime juice and extra virgin olive oil over the salad ingredients.
3. Season with salt and pepper, to taste.
4. Toss everything together until well combined.
5. If desired, sprinkle sliced almonds or pumpkin seeds over the top for added crunch.
6. Serve immediately or chill in the refrigerator until ready to serve.
