Ingredients:
- 1 lb shrimp, peeled and deveined
- 2 cups broccoli florets
- 1 tablespoon olive oil
- Salt and pepper to taste
- 2 cups cooked quinoa or brown rice
- 1 avocado, sliced
- 1/4 cup chopped cilantro (optional)
- 1 lemon, cut into wedges
For the sauce:
- 2 tablespoons soy sauce
- 1 tablespoon honey or maple syrup
- 1 clove garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon sesame oil
Instructions:
1. Preheat your oven to 400°F (200°C).
2. In a small bowl, whisk together the ingredients for the sauce: soy sauce, honey or maple syrup, minced garlic, grated ginger, and sesame oil. Set aside.
3. Place the broccoli florets on a baking sheet and drizzle with olive oil. Season with salt and pepper, then toss to coat. Roast in the preheated oven for about 15-20 minutes, or until tender and slightly charred.
4. While the broccoli is roasting, heat a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until pink and cooked through. Pour the prepared sauce over the shrimp and toss to coat. Cook for an additional minute, until the sauce thickens slightly.
5. To assemble the power bowls, divide the cooked quinoa or brown rice among serving bowls. Top with the roasted broccoli and sautéed shrimp. Add sliced avocado and chopped cilantro, if desired. Serve with lemon wedges for squeezing over the bowls before eating.
