Ingredients:
- 1 pound large shrimp, peeled and deveined
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup dry white wine
- 2 tablespoons lemon juice
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
- Cooked pasta or crusty bread for serving
Instructions:
1. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
2. Add the shrimp to the skillet in a single layer. Season with salt and pepper. Cook for 1-2 minutes on each side until the shrimp turn pink and opaque.
3. Remove the shrimp from the skillet and set aside.
4. Pour the white wine and lemon juice into the skillet. Scrape up any browned bits from the bottom of the pan and let the sauce simmer for 2-3 minutes until slightly reduced.
5. Return the shrimp to the skillet and toss to coat them in the sauce. Cook for another minute until heated through.
6. Remove the skillet from heat and sprinkle chopped parsley over the shrimp scampi.
7. Serve the shrimp scampi over cooked pasta or with crusty bread to soak up the delicious sauce. Enjoy!
