Spooky Sweet Potato “Monster” Mash
Servings: 2–4 | Prep + Cook Time: 20 minutes
Ingredients:
2 medium sweet potatoes, peeled and chopped
1–2 tbsp coconut oil or ghee
1/4 tsp cinnamon
Pinch of nutmeg
Pinch of salt
1–2 tbsp maple syrup or honey (optional, for sweetness)
Black sesame seeds or pumpkin seeds (for “monster eyes”)
Instructions:
Boil or steam sweet potatoes until soft, about 12–15 minutes.
Drain and mash with coconut oil, cinnamon, nutmeg, salt, and maple syrup (if using).
Spoon mash into a serving dish and create “monster eyes” with black sesame seeds or pumpkin seeds.
Optional: drizzle a little extra maple syrup on top for a spooky-glazed effect.
