Serves: 4–6
Ingredients:
2 cans cannellini beans, drained & rinsed
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
2 cups chopped kale
4 cups vegetable or chicken broth
2 tsp Italian herbs (oregano, basil, thyme)
Salt & pepper
Optional: 1 cup cooked Italian sausage
Instructions:
Combine all ingredients. Cook on crockpot low 6 hrs or high 3 hrs.
Stovetop: Sauté onion, carrot, celery 5 min. Add beans, broth, herbs, and sausage. Simmer 25–30 min. Add kale last 5 min.
