Ingredients:
For the marinade:
- 1/4 cup (60ml) olive oil
- 1/4 cup (60ml) lime juice
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
For the steak and vegetables:
- 1 lb (450g) flank steak or skirt steak, sliced thinly against the grain
- 2 bell peppers (red, green, or yellow), thinly sliced
- 1 large onion, thinly sliced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 8-10 small flour or corn tortillas
- Optional toppings: shredded cheese, salsa, guacamole, sour cream, chopped cilantro, lime wedges
Instructions:
1. In a bowl, whisk together the olive oil, lime juice, minced garlic, chili powder, cumin, paprika, dried oregano, salt, and pepper to make the marinade.
2. Place the sliced steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, making sure it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours, to marinate.
3. While the steak is marinating, prepare the vegetables. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the sliced bell peppers and onions to the skillet. Cook, stirring occasionally, until the vegetables are tender and slightly caramelized, about 8-10 minutes. Season with salt and pepper to taste. Transfer the cooked vegetables to a plate and set aside.
4. In the same skillet, add the remaining tablespoon of vegetable oil. Remove the steak from the marinade and shake off any excess. Discard the remaining marinade. Add the sliced steak to the skillet in a single layer. Cook for 2-3 minutes per side, or until browned and cooked to your desired level of doneness. Remove the steak from the skillet and let it rest for a few minutes before slicing it thinly against the grain.
5. Warm the tortillas according to package instructions.
6. To assemble the fajitas, place some sliced steak and cooked vegetables on each warm tortilla. Add your desired toppings such as shredded cheese, salsa, guacamole, sour cream, and chopped cilantro.
7. Serve the steak fajitas immediately with lime wedges on the side for squeezing over the fajitas.
