Ingredients:
For the chicken:
- 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
For the rice:
- 1 cup (200g) long-grain white rice
- 2 cups (475ml) chicken broth or water
- 1 tablespoon lime juice
- Salt to taste
For the toppings:
- 1 can (15 oz/425g) black beans, drained and rinsed
- 1 cup (150g) corn kernels (fresh, frozen, or canned)
- 1 bell pepper, diced
- 1/2 red onion, diced
- 1 avocado, sliced
- 1/2 cup (120ml) salsa
- 1/4 cup (60ml) sour cream or Greek yogurt
- Fresh cilantro, chopped
- Lime wedges for serving
Instructions:
1. Prepare the chicken: In a bowl, combine the chicken pieces with olive oil, chili powder, cumin, paprika, salt, and pepper. Toss until the chicken is evenly coated.
2. Heat a skillet over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 6-8 minutes. Set aside.
3. Prepare the rice: In a medium saucepan, combine the rice, chicken broth or water, lime juice, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer until the rice is cooked and the liquid is absorbed, about 15-20 minutes. Fluff the rice with a fork.
4. Assemble the bowls: Divide the cooked rice among serving bowls. Top with the cooked chicken, black beans, corn, bell pepper, red onion, avocado slices, salsa, and sour cream or Greek yogurt.
5. Garnish with fresh cilantro and serve with lime wedges on the side.
