After experimenting with various attempts to add excitement to our usual rib and pork chop dishes, we stumbled upon this recipe, and it quickly became our favorite way to spice things up! Now, whenever we're craving a twist on classic ribs and pork chops, this recipe is our go-to choice.
Korean Style Spare Ribs:
Ingredients:
- 2 lbs Korean-style beef spare ribs (Galbi)
- 1/2 cup soy sauce
- 2 tablespoons sesame oil
- 4 cloves garlic, minced
- 2 green onions, chopped
- 1 tablespoon rice vinegar
- 1 teaspoon grated ginger
- 1/4 teaspoon black pepper
- a few dashes of siracha (optional)
- Sesame seeds and sliced green onions for garnish
Instructions:
1. In a bowl, whisk together soy sauce, siracha, sesame oil, minced garlic, chopped green onions, rice vinegar, grated ginger, and black pepper to make the marinade.
2. Place the spare ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, making sure they are well coated. Marinate in the refrigerator for at least 2 hours or overnight for best flavor.
3. Preheat your grill to medium-high heat or preheat the oven to 350°F (175°C).
4. Remove the ribs from the marinade and shake off any excess. Discard the marinade.
5. Grill the ribs for about 5-7 minutes per side, or until caramelized and cooked to your desired doneness. Alternatively, you can bake the ribs in the oven for about 30-40 minutes, turning once halfway through cooking.
6. Once cooked, transfer the ribs to a serving platter and garnish with sesame seeds and sliced green onions.
Grilled pineapple with a glaze:
Ingredients:
- 1 pineapple, peeled, cored, and sliced into rings
- 1/4 cup honey
- 2 tablespoons siracha
- 1 teaspoon red pepper flakes
- 2 teaspoons pineapple juice
- Pinch of salt
Instructions:
1. Preheat your grill to medium-high heat.
2. In a small bowl, whisk together the honey, pineapple juice, siracha, red pepper flakes, and a pinch of salt to make the glaze.
3. Brush both sides of the pineapple rings with the glaze.
4. Place the pineapple rings directly onto the grill grates and cook for about 2-3 minutes on each side, or until grill marks appear and the pineapple is heated through.
5. Remove the grilled pineapple from the grill and brush with any remaining glaze before serving.
6. Serve hot as a side dish or dessert. Enjoy your grilled pineapple with a delicious glaze!
