Ingredients:
- 1 cup whole wheat flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1 cup milk of choice
- 1/2 cup pumpkin purée
- 1 large egg
- 2 tbsp maple syrup
- 1 tsp vanilla extract
- Butter or coconut oil for cooking
Instructions:
1. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
2. In another bowl, mix the milk, pumpkin purée, egg, maple syrup, and vanilla extract until smooth.
3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
4. Heat a griddle or skillet over medium heat and grease with butter or coconut oil.
5. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
6. Serve with maple syrup, chopped nuts, or whipped cream.
