Ingredients:
For the salad:
- 1 lb (450g) ground beef or turkey
- 1 packet (about 1 oz or 28g) taco seasoning mix
- 1 head of lettuce (romaine or iceberg), chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/2 cup diced bell peppers (any color)
- 1 avocado, diced
- 1/4 cup chopped fresh cilantro (optional)
For the dressing:
- 1/4 cup sour cream
- 1/4 cup salsa
- 1 tablespoon lime juice
- Salt and pepper to taste
Instructions:
1. In a large skillet, cook the ground beef or turkey over medium heat until it's browned and cooked through. Drain any excess fat.
2. Add the taco seasoning mix to the cooked meat according to the instructions on the packet. Stir well to combine and let it simmer for a few minutes. Remove from heat and set aside.
3. In a small bowl, mix together the sour cream, salsa, lime juice, salt, and pepper to make the dressing. Adjust seasoning to taste.
4. In a large salad bowl, combine the chopped lettuce, cherry tomatoes, black olives, shredded cheese, diced red onion, diced bell peppers, avocado, and cilantro (if using).
5. Add the cooked taco meat on top of the salad.
6. Drizzle the dressing over the salad and toss everything together until well combined.
7. Serve immediately, garnishing with extra cilantro or shredded cheese if desired. You can also serve with tortilla chips on the side for added crunch.
